4 Low-Carb Breakfast Recipes You Must Try in the New Year

Ever wake up one day and start to feel stuck about what to eat for breakfast? Do you prefer something that is a little more healthy and energizes you for the rest of the day? The dawn of a new year has inspired many of us want to eat more healthily. That’s why I took the liberty of researching a few low-carb breakfast recipes that’ll get your day off to a strong start. I may try some of these to jump-start my day.

Bell Pepper Eggs

Try this simple, updated take of an egg in a hole recipe. Instead of using bread, why not cut up your green and red bell peppers and make rings? Just put your bell pepper rings in a lightly greased pan, cook them for a few minutes, and crack a few eggs in the middle. Add salt and pepper for taste and garnish this “easy peasy” dish with chives and parsley. This dish is low on carbs and low on cooking time.

I made my own version of Bell Pepper eggs. May not be attractive-looking, but it was pretty tasty.

Cauliflower Benedict

If you like eggs Benedict, why not try “Cauliflower Benedict”? Yes, when I heard about this recipe and saw it online, it made my mouth water. Although, ironically enough, I’ve never even tried eggs benedict. Anyway, if you want to cut down the calories, this will probably be a healthier version by adding cauliflower in the mix.

You will first start by making some cauliflower hash brown patties using cauliflower, one large egg, a cup of shredded cheese, a pinch of cornstarch, S &P, and olive oil. You will then use 2 large eggs to poach your eggs in a saucepan of water.

Create your hollandaise sauce using 4 egg yolks, a squeeze of lemon juice, a pinch of cayenne pepper, a stick of melted butter, and kosher salt. Serve the cauliflower hash brown patties and top it with Canadian bacon, poached eggs, and the sauce. Garnish it with paprika and chives if you like.

Lemon Ricotta Pancakes

I’m curious about this pancake recipe, which only has 6 grams of carbs and 9 grams of protein per serving. It doesn’t contain grain-free ingredients and the lemon and ricotta give this dish lots of flavor. I’m unable to share the recipe because the site it came from can’t be reached. However, once I find the recipe, I will surely be cooking and sharing this with you all.

Cheesy Asparagus Frittata

Now I’ve personally never had a frittata, but I may want to try one such as this recipe. You can make this low-carb choice as a breakfast or brunch dish. For those who are unfamiliar, frittatas are known as Italian baked omelettes. You will need eggs, cheese (Ricotta and Italian shredded), asparagus, olive oil, and baking soda. For flavor, you will need garlic, S&P, red pepper flakes, and some chives for a mild herb taste. This dish is light on calories and fat but sounds like a winner.
