Throw in a tablespoon of olive oil, a teaspoon of thyme, curry powder, and half a teaspoon of sea salt for flavor. Once you’ve incorporated most of the ingredients in a medium saucepan, add 4 cups of water and bring to a boil to cook covered until it’s tender and bright green. Once the soup is cooked for about 20 minutes, you could remove it from heat and transfer it to a blender to puree with the avocado and 3 tsp of lime or lemon juice. Garnish it with pumpkin seeds and enjoy.

Lentil Tacos

You’ve heard of fish tacos, turkey tacos, and even black bean tacos. How about lentil tacos? Yes, lentils are a good healthy replacement for ground beef and are vegetarian-friendly. A serving of lentils provides 15 grams of fiber, essential for proper digestive motility, and supports gut bacteria.

All you need for this recipe are 2 cups of cooked lentils, 1 medium onion, chopped, 2 large carrots, shredded, 1 can of diced tomatoes with green chiles, and ½ -1 cup of frozen chopped spinach. It also contains a taco seasoning recipe which includes a teaspoon of chili powder, ½ teaspoon of garlic powder, paprika, cumin, oregano, and ginger, ¼ teaspoon of cayenne powder, salt, turmeric, and black pepper. Use any taco shells you want to create this simple, sustainable recipe.

Cinnamon Raisin Banana Vegan Scones

Here’s a good pastry recipe that is vegan-friendly and uses organic ingredients. It doesn’t take too long to make. You could be done in only 30 minutes. Try it in the morning with your coffee or in the afternoon.

This recipe consists of organic ripe bananas, organic all-purpose flour, a tablespoon of baking powder and ground cinnamon, ½ teaspoon of ground nutmeg and ground ginger, ¼ cup of organic peanut butter, 1/3 cup of coconut milk, 2 tablespoons of pure maple syrup, 1/3 cup of solid coconut oil and raisins, ½ teaspoon of vanilla extract and sea salt. Top your 6 scones with a three-ingredient vanilla glaze of organic powdered sugar, vanilla extract, and coconut or any other plant-based milk.

Sweet Potato and Brussels Sprouts Gratin

This sweet and savory recipe requires just one pan to make. It is easy, nutritious, and tastes like comfort food. Just start off using a food processor to slice the brussels sprouts and sweet potatoes. Preheat the oven to 350 degrees. Then place them in that one baking dish mentioned earlier.

In a mixing bowl, combine the oat milk, vegetable broth, dijon mustard, nutritional yeast, maple syrup, sea salt, and black pepper. Once you stir all those ingredients well, pour them over the brussels sprouts and sweet potatoes. In another bowl, toss in panko bread crumbs or homemade bread crumbs, finely chopped walnuts or pecans, 2 cloves of minced garlic, olive oil, and sea salt. Stir well and pour the mixture over the veggies and spread evenly. Bake the dish for 40 minutes, rotating it halfway through.
